This book is the first volume in a series addressing Claus Henriksen’s approach to his food craft and use of local and sustainable produce in his kitchen throughout the year. We will visit some of the growers who supply produce to Restaurant MOTA, illustrating and describing the cultivation, harvesting, and processing involved.
