Safe Food: a Practical Approach to Food Safety
Alcides Troncoso
Food-borne diseases (FBD) are the most widely spread public health problem worldwide. The World Health Organization considers them as the main cause of morbidity and mortality in developing countries, and responsible for high levels of loss of productivity in developed countries. Therefore, it is necessary to keep them under epidemiological surveillance in order to apply timely measures allowing their control and prevention. Surveillance of marketed food is an issue that should carry health risk awareness and the importance in the implementation of corrective actions, training and monitoring of food handlers.
