Vanilla has been discovered already 500 years ago. From the beginning of the 17th century its value grew, pushed by the demand of the consumers. This demand caused a great number of new production methods for artificial, nature-identical and natural vanilla flavours. Vanillin is world's number flavour chemical for a long time. The consumer trends of the 21st century are towards, fair trade, sustainable, natural, fair traded and organic products. The aim of this study is to find out if the development of the vanilla flavour production methods fits to the changing attitude of the consumer.
