Having spoken to a number of people who are 'Just about managing' or even struggling to produce meals on a tight budget I fear the reason is not just financial but many lack confidence when it comes to cooking and trying new recipes. With such people in mind, I spent some considerable time writing this book. I am not a professional chef, just a prudent pensioner sharing her numerous years' experience of living well on a budget. Planning ahead can reduce waste and save money. I show how I plan for a few days ahead, over a period of 21 days together with recipes. Each recipe is for 2 adult portions. I begin with an empty cupboard, I show shopping lists for ingredients needed, together with cost. I buy meat and free range eggs from a local butcher. Over all the average cost of each meal works out at around £2. (At January 2018) This is calculated on full prices, it could be reduced by taking advantage of offers. A friend who uses my recipes was delighted to find organic carrots reduced as they were on the best before date and made soup for her family for 25p.
