Edible oils and fats obtained from plants or animals are extremely important in the diet of humans and animals. They also make food tastier and delay the feeling of hunger. Edible vegetable oils are commonly grouped according to the main type of fatty acid present in their composition. Sunflower oil belongs to the oleic/linoleic acid class because it is essentially the triglyceride of oleic and linoleic acids. Sunflower oil is extracted from the seeds of the plant Helianthus annuus by hydraulic pressing, screw pressing or solvent extraction. Sunflower seeds have oil content in the range of 35-45%. Parameters such as climate, temperature, location of the seed in the flower and man induced genetiC interventions, all affect the properties of the oil.
