Sunflower oil belongs to the oleic/linoleic acid class because it is essentially the triglyceride of oleic and linoleic acids. Sunflower oil is extracted from the seeds of the plant Helianthus annuus by hydraulic pressing, screw pressing or solvent extraction. Sunflower seeds have oil content in the range of 35-45%. Parameters such as climate, temperature, location of the seed in the flower and man induced genetiC interventions, all affect the properties of the oil.
