Mexican cuisine may be the most popular ethnic cuisine in the world right now and as with any ethnic cuisine trend within time the culinary world tends to take it to other places and make it more interesting and fun. So far in the major restaurant market few have taken the authentic ingredients, techniques and flavors of Mexican cuisine and melded them with other cuisines or gone a more progressive route with it. A couple of years ago I was commissioned as a chef-consultant to create an authentic Mexican menu concept for a restaurant in Key West Florida and ultimately it evolved into much more than authentic Mexican as I could not escape all of the culinary influences in the Keys. The cuisine it became I decided to call Key West Mex.
