It is best to use the most organic ingredients possible for the recipes in this book. If you are lucky enough to have a farmers' market near you, then that is probably the best place to buy your eggs, fruit, and vegetables. If you are concerned with cholesterol levels or fat content, substitute egg whites where you see whole eggs, unless the yolk is integral to the recipe. There are other substitutions you can make to reduce the calorie count like using skim milk, reduced-fat cheese and cooking spray instead of vegetable oil. Otherwise, treat yourself and remember that this is the first meal of the day so you can load up a little bit. One more note I would like to mention; some recipes mention a 'toothpick test.' For this test, insert a toothpick into the middle of the baking, and if it comes out clean, then the food is ready to serve.
